Stuffed Beef Tenderloin with Spinach

  • 1/2 pound sliced fresh mushrooms
  • 4 garlic cloves
  • 1 package (6 oz) fresh baby spinach chopped
  • 1 cup crumbled blue cheese
  • 1 beef tenderloin ( 2 pounds)
  • 1/2 teaspoon salt divided
  • 1/2 teaspoon black pepper divided

In a small pan add a bit of olive oil and saute mushrooms until tender. Add garlic stir and cook for 1 minute more. In a bowl combine the mushroom mixture, spinach and cheese...set aside. Cut the tenderloin lengthwise, a slit down the center to within 1/2 in of the bottom. Open tenderloin so it lies flat. Cover with plastic wrap and flatten to 3/4 in thickness. Remove wrap and sprinkle with a 1/4 teaspoon salt and 1/4 teaspoon pepper. Spread stuffing mix over meat to within 1 inch of the edges. Close tenderloin by tying with kitchen twin at 2 inch intervals. Sprinkle with remaining salt and pepper. You can grill this at 425 degrees for 30 minutes, or you can put it on The Meat Monkey, use your meat thermometer get your desired done-ness. Let rest for 5-10 minutes. I do 2 tenderloins when I feed a big group. 1 tenderloin feeds around 8 depending on your appetite! Happy Grilling!!
