Best Turkey Ever

  • 1/2 lb. Butter (softened to room temperature)
  • 1 tsp Basil
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1 tsp Sage
  • 1 tsp Rosemary

Press ingredients into the softened butter evenly. Place the butter mix into a sandwich baggie and freeze. After cold, cut the butter mix into slices and place the slices under the turkey skin. Use your fingers to separate turkey skin from the flesh. Place slices randomly all over turkey and grill until done (don’t forget to use your meat thermometer).

Stuffed Beef Tenderloin with Spinach

  • 1/2 pound sliced fresh mushrooms
  • 4 garlic cloves
  • 1 package (6 oz) fresh baby spinach chopped
  • 1 cup crumbled blue cheese
  • 1 beef tenderloin ( 2 pounds)
  • 1/2 teaspoon salt divided
  • 1/2 teaspoon black pepper divided

In a small pan add a bit of olive oil and saute mushrooms until tender. Add garlic stir and cook for 1 minute more. In a bowl combine the mushroom mixture, spinach and cheese...set aside. Cut the tenderloin lengthwise, a slit down the center to within 1/2 in of the bottom. Open tenderloin so it lies flat. Cover with plastic wrap and flatten to 3/4 in thickness. Remove wrap and sprinkle with a 1/4 teaspoon salt and 1/4 teaspoon pepper. Spread stuffing mix over meat to within 1 inch of the edges. Close tenderloin by tying with kitchen twin at 2 inch intervals.
